Paul Lato is a Polish-born professionally trained and Canadian-educated sommelier. After spending ten years in the Toronto restaurant trade, he moved to Santa Barbara County, California in 2002 to pursue his dream of making fine wine. His now highly acclaimed artisan winery focuses on producing high-end single vineyard designate wines that unlock the great potential of California’s sun-kissed vineyards while conveying a sense of European sensibility - featuring classic Burgundian and Rhone varietals among other pop-up projects.
